20th Anniversary of Wholesome Baking

Erin Baker is celebrating her 20th year of wholesome baking! Who would have thought that the iconic Breakfast Cookie we’ve all come to love would have started in a rented fairground kitchen back in 1994?

Erin started small but quickly gained a loyal following of Breakfast Cookie lovers with a few key local coffee shops. “I think I first became known as The Cookie Lady after I sold my Jeep to afford my first commercial sized oven… It was quite the sight to see me riding my Blue Schwinn around town with Breakfast Cookies stacked tall in my bike baskets!” explains Erin.

The Help Feed 1 Million Kids Program has been her most inspiring accomplishment thus far. “Being able to feed kids in need is dear to my heart and I’m excited to see how much the program will grow in the next few years!” says Erin. Since the program started in 2010 she’s donated over 230,000 Breakfast Cookies to kids at Boys & Girls Clubs across Washington State and the Home Port Learning Center in Bellingham, WA.

What’s next for Erin Baker? “Quality whole food ingredients in hassle free food is something people no longer are hoping for. They are expecting it.” Chief Operating Officer Rob McCormack mentions. “We’re clearing the way to demonstrate Erin’s mission to a wider audience and may ruffle a few companies’ feathers along the way. It’s a mission our team believes is at our core.”
